1. Have you tried Instructables: http://www.instructables.com/ . It's got a wide range of projects that are usually very well documented. Also the projects are tagged which allows you to quickly find the easiest ones.
2. Easy means somebody else already thought of it. That means it is not an invention, you're just copying someone else. Try this: look around the house, and try to think of something, anything, that might make life easier. I don't know, a better way to open your window, or maybe a way to clean up without moving from your desk. Anything. And then try to figure a thing, an object, a device, that can do the job. That's invention.
